Georgia, this is something I've mentioned on my blog a few times. It's soooo important! I don't like to mess with the scale every time I make tea, so whenever I get a new tea I see how much different measures weigh and decide which I prefer for the new tea and then write it down. So if I find that a new tea is 2 grams (or 3 grams) per teaspoon (or whatever) and that I like that amount for 8 ounces of water, then I write it down.
