Snacks with Bamboo Mountain "Zhu Shan"

Tao of Tea's Bamboo Mountain "Zhu Shan," an oolong from central Taiwan, is green, with a grassy nose and liquor.  There is a hint of oolong at the back of the throat -- roasted sweetness. This flavor can be intensified if you rinse, then steep several teaspoons of the beautifully curled leaves with boiling water.  With only one teaspoon, the liquor is very floral; too much so for me.  Aged cheddar and spiced almonds perfectly complement this oolong.
