White peony presentation tea

Mary Lou and Robert J. Heiss write that presentation or blooming teas or "hui fa cha" were banned in China during the Cultural Revolution "because they were considered wasteful and frivolous."  A blooming tea can be enjoyed as a centerpiece after steeping by placing the ball in cold water and changing the water daily.  The bloom pictured above is a white peony from the Teance Tea Room in Berkeley, California.
