How to Make: Matcha, Usucha Style
Last week I had the pleasure of tasting five Japanese green teas at Ippodo Tea Company. The first tea was a matcha.
The matcha was prepared using the tools above: a chasen (whisk), chasen-tate (whisk stand), chashaku (tea ladle), strainer, and tea bowl with serving spout.
The hot water for the tea was ladled from this majestic pot.
The matcha was prepared usucha style, quickly whisking the matcha and water for 10-15 seconds. Beyond 15 seconds, the tea will be bitter.
