I've heard good things about NYC's water too. I loved the tap water in Cleveland, Ohio, too, when I lived there.I rarely cold-brew tea, and I have yet to produce good results brewing anything by that method. For me, it's still steep-hot-and-chill, and I usually just brew a very small amount and then cool that to room temperature before adding cold water and chilling it in the fridge, or pouring that over ice if I'm in a hurry.
